Some tomatoes, some cucumbers, some fresh basil, some burrata…let’s make some pasta

It’s the last evening before shopping, so I check my fridge and look what’s left.I definitely made a mistake in my planning, but, no problem, we’ll find something.Chop 2 smaller cucumbers, 400 grams of cherry tomatoes, 1 large red onion, 4 garlic cloves, 1 chili and 4 cm of fresh ginger. Put in an oven dish. Add a drizzle of olive oil, 1 teaspoon of dried basil and 1 teaspoon of dried thyme. Bake in the oven at 180° for 30 mins. Stir halfway and add the zeste of 1 lemon.Boil a portion of pasta in salted water.Mix pasta with vegetables in the oven dish. Taste, add pepper and salt. Spread a luscious burrata. Put back in the oven for 10 mins. Finish with fresh basil, a drizzle of lemon juice and a drizzle of delicious olive oil.Simple,vegetarian and delicious.
