This morning I took a portion of 400 grams of dogfish from the freezer. With 700 grams of cleaned Swiss chard and 400 grams of green beans as vegetables our dinner for tonight will be complete.
Clean, rinse and drain the Swiss chard. Clean, rinse and drain the green beans. Heat a large pan with water. Add salt once boiling ( I learned that adding salt from the start will add time for the water to boil). Put the Swiss chard in the boiling water. Add the beans after 2 minutes of boiling. Once the Swiss chard is ready and the beans al dente, drain and rinse with ice cold water.
Chop 4 garlic cloves and 1 chili. Heat a pan. Add 1 table spoon of olive oil and the garlic and chili. Fry for a few minutes. Add the vegetables and a few stems of fresh thyme. Bake and stir. Season with pepper and salt.
Dry the dogfish. Put in a plate. Add pepper, salt and 1 table spoon of olive oil. Turn the fish. Heat a grill pan. Grill the fish for approximately 5 minutes at each side.
Serve the fish on the vegetables with a few lemon wedges and 2 table spoon of capers. Awesome in many ways.
