Frozen figs

A few bags of frozen figs are waiting in the freezer. Inspired by a recipe of a quiche in delicious.nl I prepare an ovendish without using pastry and eggs.

Cut 500 grams of peeled potatoes in slices of 0.5cm. Spread in an oiled oven dish. Slice 2 large fennels. Spread on the potatoes. Spread a little drizzle of olive oil. Bake in the oven at 200° for 40 mins. Cover with aluminium foil if the surface becomes too dark.

Chop 4 garlic cloves. Mix +/-120ml of cream with +/-120 ml of semi-skimmed milk. Add 1 table spoon of dried basil, 1 teaspoon of cumin seeds, pepper and salt. After 40 minutes of baking, spread the garlic and creamy mixture on the vegetables. Spread 14 halves of defrosted figs. Finish with cheese ( goat cheese is the best, but for Iris a soft version).

Bake for another 30 mins or longer, until ready (cover if necessary). Finish with some fresh basil.
