The Crete Senesi is our number one in Tuscany. We are so lucky to live in between the Chianti and the Crete Senesi. The seasonal changes are amazing. No picture can show the real beauty but I will at least give you an idea, thanks to my personal photographer Iris.
To avoid lack of cooking energy after a nice walk, this dish was easy to prepare in advance.
For 2-3 portions, cut 2 white and 2 red onions in slices of 1 cm. Spread in a greased oven dish. Heat 250 ml of semi skimmed milk and 250 ml of soy cream. Add 2 bay leaves, 4 chopped garlic cloves, a few chopped fresh sage leaves, pepper, salt and nutmeg. Once boiling, turn off the fire. Grate 50 grams of parmesan. Add 1/2 to the creamy sauce. Pour on the onions. Spread some fresh sage leaves. Cover with aluminium foil. Bake in the oven at 180° for 1h. Stop the oven. Go for a walk and leave the dish in the hot oven.
Remove the aluminium foil. Spread the other portion of the cheese. Bake for another 30-40 mins at 180°. Serve with a green salad or, for a non-vegetarian meal, as side dish with roasted meat.
