Creamy puree, real comfort food

Today I have been the perfect housewife: laundry, cleaning, 40 mins of running on the treadmill while watching a romantic Netflix serie and cooking for 2days because tomorrow I will be fashionable online for my master course ( if internet has been repaired 🤞).

Tonight we will have real cosy puree and mackerel filets.

Clean and chop 600 grams of potatoes. Put in a large pan with hot salted water and 2 bay leaves. Start to cook. Once boiling add 600 grams of romanesco cauliflower (a small one, all inclusive, thus use also the outer leaves) and 4 chopped garlic cloves. Once everything is well done, drain but leave some of the cooking water. Crush. Add lots of black pepper, salt, 1 table spoon of dried thyme and 125 grams of mascarpone. Put in an oiled oven dish. Spread 4 defrosted mackerel filets (skin upwards). Spread pepper, salt and a little drizzle of olive oil.

Slice 2 large red onions. Bake in 1 table spoon of butter until soft. Add 2 table spoons of balsamic vinegar. Continue baking until perfectly caramelized.

Grill the puree in the oven at 250° for 10-15 mins. Serve with the caramelized onions.
