How lucky we are to have connection with the world outside thanks to internet and social media. Due to a general technical problem we are disconnected for a few days.One of the reasons to cook on a gas stove is that, even if there’s a problem with electricity, cooking is still possible😉.Nduja piccante is a lovely ingredient which I will use in a stew with frozen calamari.Chop and fry 4 garlic cloves and 1 red onion in a drizzle of olive oil. Add 1 large table spoon of nduja( which I store in the freezer, as I do with curry paste). Stir and fry. Add 1 large chopped bell pepper and 1 table spoon of dried basil. Stir and fry. Add 400 grams of frozen calamari. Stir and fry. Add 1 can of cherry tomatoes and 1 can of water. Allow to simmer for 10 mins. Add 150 grams of pasta, fregola in our case. Allow to simmer for a few minutes. Here I stopped and continued the following day. Reheat the pan. Allow to simmer ( uncover the pan) until pasta is al dente and sauce is thickening. Taste, add pepper and salt.Serve with fresh basil. Enjoy a weekend in complete lockdown.
Food is comfort in these strange and also real times! But, maybe a good thing to be cut of internet, the digital world,….We are still here, look at the positif site and forget Corona for an instant…..Very good for the health, food tasts even better,…lSun up, sun down, go’s on and on….Sleep tight tonight. xxx
