Inspired by delicious.nl

In search of cooking inspiration I remembered I could read delicious.nl online. As we are still on our roadtrip, I found some doable recipes.

My visit to a Finnish supermarket was successful, I could find almost all ingredients.

For tonight I bought 1 kilo of beetroot, 50 grams of chorizo, 150 grams of a creamy blue cheese. 1 grapefruit and 250 grams of cherry tomatoes. I add 1 untreated lemon, 4 garlic cloves, 1 chili, 1 red onion, 20 grams of pine nuts,  1 container of chickpeas, 1 table spoon of cumin seeds and some balsamic vinegar.

Start with the beetroot. Remove the skin and ugly parts ( I had to throw 2 rotten halves). Chop in smaller cubes to reduce cooking time. Put in a small casserole, add some water, salt and a few bay leaves. Boil until al dente. Drain and set aside.

Chop the onion, garlic and chili. Fry in a drizzle of olive oil. Add the pine nuts, the cumin seeds and the chorizo ( for the flavor and I will eat it too🙃). Add the chickpeas. Bake until crispy ( not so doable on the the camper stove). Add the zeste of the lemon. Continue to bake. Add the beetroot and a large drizzle of balsamic vinegar and the halved cherry tomatoes. Season with pepper and salt.

In the meantime, remove all skin from the grapefruit. Cut in pieces.

Finish the beetroot salad with the lemon juice, the grapefruit,  the creamy blue cheese and some parsley.

What a delicious combination😋.

    cooking for oneself misses a couple of stimulating aspects such as social interaction , feedback on your creations etc .

    The upside is that it is a wonderful act of self-care and enhances your relationship with ingredients. You become more adventurous ..
