What a country, what a powerful nature ๐. What a special experience to park your house in the middle of nowhere and to spend the night surrounded by an extraordinary landscape.
As we plan our trip day by day, I buy food for 1, max 2 days. Tonight we’ll have a vegetarian meal with halloumi, which I can’t easily find in Norway. The ingredients for tonight are : 500 grams of broccoli, a few carrots, 1 sweet potato ( approximately 300 grams), 2 small sized red onions, 2 chili, 4 garlic cloves, 1 teaspoon of curry powder, 1 table spoon of cumin seeds, 1 halloumi of 200 grams and the last parsley, coriander of my little garden and 1 pomegranate.
Clean and chop all ingredients. Put the carrots, sweet potato, onion, garlic, chili, cumin and curry in the simmer pan. I urgently have to finish the ghee ( it’s too hot in Norway, around 30ยฐ), thus, add 1, 5 table spoon of ghee or an alternative. Heat the pan and start the baking. Stir regularly. After 10 minutes, add the chopped and peeled stems of the broccoli. Continue to bake, stir regularly. After another 10 minutes, add the broccoli roses. Continu to bake for another 15 minutes. Stir regularly. Add some salt. Cover to keep the liquids.
In the meantime, remove the seeds from the pomegranate. Set aside. Chop the green herbs( mine look really miserable). Set aside. Cut the halloumi in cubes. Bake crispy in another pan in some oil.
Mix the vegetables with the pomegranate, the herbs and the halloumi. Enjoy this colorful dish on a beautiful spot on earth. What a special combination ๐
