Cold and sunny

After being in Belgium for the second time, we are gradually getting back in our daily routines. The cold and sunny weather helps to be outside for regular walks and Oskar doesn’t mind😉. We start the week with a vegetarian pasta dish.

For 2p you need 1 onion, the usual 4 garlic cloves, 1 chili, 120 grams of risoni or Greek pasta, 1 can of cherry tomatoes, 40 grams of black olives, 600 grams of courgettes, dried oregano, fresh parsley and a lucious burrata.

Chop and fry the courgettes crispy in a drizzle of olive oil. Set aside. Reheat the same pan. Add some more olive oil. Chop and fry the onion, garlic and chili for a few minutes. Add the risoni. Stir. Once glazy, add the tomatoes, a can of water, 1 table spoon of oregano, pepper and salt. Allow to simmer. When the risoni is al dente, add courgettes and the halved olives. Taste, add pepper and salt. Finish with parsley. Serve with the burrata. Easy, healthy, delicious food for Mondays meal.
