The fantastic fresh Tropea onions from Calabria are back ❤

No onion can beat the sweet delicious Tropea onion. For today’s recipe, inspired by Jamie Oliver, cut 5 of those beauties in 1 cm thick slices. Spread them in an oven dish. Season with pepper, salt. Spread a drizzle of olive oil. Bake in the oven at 200° for 40 minutes. Stir regularly. Add 4 chopped garlic cloves and a drizzle of red wine vinegar halfway

Cook 120 grams of farro in salted water until al dente. Add 1,5 table spoon of peeled hazelnuts at the last minute. Drain. Mix with chopped mint and chopped Cuban oregano ( a new discovery which I found at the local market).

Mix farro and onions. Finish with 1 table spoon of sumak. Serve with burrata (or feta cheese, whatever you prefer).
