A one-pan oven dish remains my favorite. Also Jamie Oliver is one of my ❤. Comforting rosy rice is a fabulous recipe which I adapted to 2p, and to docVsstyle ( more vegetables).
For 2p, wash 700 grams of those pointed sweet bell peppers. Halve them and remove the seeds. Chop. Slice 1 red onion. Chop 4 garlic cloves and 1 chili. Put in a shallow oven dish. Add a drizzle of olive oil and 2 table spoons of red wine vinegar. Add 4 bay leaves, a pinch of sea salt and black pepper. Stir. Put in the oven at 200° for 30 minutes. Stir halfway.
Add 120 grams of basmati rice, 2 table spoons of sun-dried tomato paste, 1 can of cannellini beans with the liquid and 1, 5 cup of water. Cut 200 grams of feta cheese in cubes. Add to the pan. Stir. Put the lid on the pan. Put back in the oven for 30 minutes ( until the rice is al dente). Serve with baby spinach seasoned with olive oil and red wine vinegar. 👍👍
