Filled vegetables, always a winner

Round courgettes are a bit more expensive than normal ones, but they are so 😍.

For 2p boil 80 grams of red rice al dente. Drain. Set aside.

Cut 6 courgettes in halves. Remove the inner meat. Chop. Put the cups in an oiled oven dish.

Fry 4 chopped garlic cloves in a drizzle of olive oil. Add the chopped meat of the courgettes. Stir and fry. Add 1 can of chopped tomatoes. Allow to simmer. Season with 1 table spoons of dried basil, 1 table spoon of dried oregano, 1/2 table spoon of dried thyme, lots of pepper and salt. After 15 minutes, add the drained rice and 1 can of drained borlotti ( or similar) beans. Fill the courgettes.

Chop 90 grams of gruyere ( or similar) in small cubes. Spread on the courgettes. Bake in the oven at 180° for 25- 30 minutes. Serve and enjoy dinner
