Paella in docvs style

We have a lovely friend as our guest this week. Gerda didn’t really express any preferences. So I decide to start with a paella variety. For 3p I buy 500 grams of mussels, 500 grams of vongole, 400 grams of squid and 300 grams of peeled frozen good quality scampi. As vegetables I need 1 chili, 4 garlic cloves of course, 250 grams of frozen peas, 1 can of tomatoes and 1 large red onion.

Start with the most important ingredient, saffron. Put a large pinch of saffron in a few table spoons of ready made chicken stock ( you need 500 ml). Allow to soak for a while. Heat a pan with 2 table spoons of olive oil. Add the chopped onion, garlic and chili. Bake and stir. Add 180 grams of risotto rice. Once glazy, pour 100 ml of white wine in the pan. Allow to evaporate. Add the tomatoes, the saffron and the chicken stock. Season with pepper and salt. Allow to simmer for 5 minutes. Pour the entire content in a large oven dish. Mix with the cleaned seafood. Cover with aluminium foil. Put in the preheated oven at 200 ° for 15 minutes. Stir. Put back in the oven for 10 minutes or until the shells are opening. Stir and add the scampi and the frozen peas. Bake for another 10 minutes uncovered. Finish with fresh parsley and lemon wedges.
