Shakshuka in a green version

Shakshuka has become a very popular dish thanks to cooks as Sami Tamimi and Yotam Ottolenghi. The list of varieties is impressive. Today’s recipe is a green one with a huge amount of vegetables.

Chop and fry 4 garlic cloves, 1chili and 1 leek in 1,5 table spoons of olive oil. Bake and stir. Add 500 grams of chopped green asparagus and 1 table spoon of cumin seeds. Bake and stir for 10 minutes. Add 250 grams of fresh spinach and a handful of frozen peas . Bake and stir. Add 1 table spoon of rose harissa. Mix. Taste, add pepper and salt. Put 4 raw eggs on the vegetables. Close the pan for 5-10 minutes, until the eggs are ready. Finish with chopped fresh coriander. Easy, healthy and tasty!
