Hake has a nickname ‘beautiful girl’ 😍. They are often considered to belong to the cod family, but officially they are a separate group. The fishmonger Mirco prepared me 2 beautiful filets, enough for 2p ( approximately 400 grams). In the awesome cook book of Alain Ducasse ‘Pure Nature’ I find inspiration for our dinner.
Chop 400 grams of new potatoes in larger cubes. Mix with 1 table spoon of olive oil and put in an oven dish. Bake in the oven at 200° for 30 minutes and stir halfway. In the meantime, chop 4 garlic cloves, 1 chili and slice 20 grams of bottarga. Dry the fish. Spread the bottarga, a few small stems of fresh rosemary, part of the chili and garlic on 1 piece of the hake.

Close with the other piece ( skin outwards). Close with kitchen twine. Add 700 grams of chopped courgettes, the leftover of garlic and chili to the pan. Season with pepper, salt and fresh rosemary. Put the fish on the vegetables and potatoes. Spread 1 table spoon of olive oil. Put back in the oven at 200° for 20-30 minutes. Stir the vegetables halfway.
