Our friend Diane has moved to our village. She has to wait for a kitchen until the end of this month. So, now and again I cook for 3p. She doesn’t like fish, and I try to cook vegetarian recipes. All in one dishes which can also be eaten at room temperature seem to me the ideal solution for someone without a kitchen ( except for a microwave in the middle of lots of boxes).Chop 1 large eggplant (450 grams) in cubes. Spread on baking paper. Mix with 3 table spoons of olive oil, 1 table spoon of cumin seeds and 1 table spoon of curry powder. Bake in the oven at 200° for 20 minutes. Stir halfway. After 20minutes add 1 chopped leek, 1 chopped cauliflower ( leaves and stem included) and 6 chopped garlic cloves. Stir. Bake for another 30-40 minutes. Stir halfway. Prepare 180 grams of whole wheat couscous, following the instructions. Mix with 130 grams of chopped dates. Allow to rest.Once all the vegetables are ready, add the couscous and the dates. Taste, add pepper and salt. Finish with lots of fresh basil.Split in 3 portions.
