Green curry with meatballs

Meatballs for me today 😋.

200 grams lovely sausage meat is waiting for an Asian make over. Mix the meat with 1 teaspoon of dried lemon grass (fresh lemongrass will obviously be much better), 1 teaspoon of grated fresh ginger and 1 teaspoon of sambal. Mix. Oil your hands. Create meatballs of approximately 3 cm. Put on baking paper and store in the fridge.

Clean and parboil 350 grams of turnip greens, 350 grams of broccoli and 350 grams of green beans. Drain. Use the water to soak 100 grams of rice noodles for 4 minutes. Drain.

Heat a pan. Spread 2 table spoons of wok oil. Bake 1 table spoon of green curry, 4 garlic cloves and a pinch of sugar for a few minutes. Stir constantly. Add 250 ml of coconut milk, 100 ml of water and a few dried lime leaves. Stir regularly. Allow to simmer for a few minutes. Add the balls. Cook the balls for minimum 6 minutes at low fire. Add water if necessary. Add the parboiled vegetables. Cook until all vegetables are al dente. Add 2 teaspoons of fish sauce. Mix with the noodles. Serve with lime wedges.
