Spring ingredients

I love the texture and flavor of new roasted potatoes, especially in combination with typical spring ingredients such as green asparagus and peas.

For 3 portions, wash 1 kilo of new potatoes. Cut in large wedges. Spread on an oven dish. Add 2 table spoons of olive oil, salt, pepper, a few bay leaves and mix. Bake in the oven at 200° for 30 minutes. Stir halfway. Add 750 grams of chopped green asparagus, 2 chopped spring onions, 6 chopped garlic cloves, 2 chopped chilis and 1 large table spoon of dried basil. Stir. Add 2 more table spoons of olive oil. Bake in the oven for 30 minutes. Stir halfway. Add 450 grams of frozen peas ( it’s too early for fresh ones). Stir and bake for another 15 minutes. Add pepper, salt and a handful of fresh basil. Finish with delicious stracchino or buffalo mozzarella.
