Lentils, fish, clementines and black olives…
Boil 150 grams of good quality lentils ( the ones of Castelluccio for example) in salted water with a bay leaf.
Mix 1 chopped shallot, 4 chopped garlic cloves with the zeste and juice of 2 clementines, the juice of 1 lemon and 3 table spoons of olive oil. Add pepper and salt. Spread sea bass filets for 2p ( 300-400 grams) on an oven dish. Brush 1/2 of the marinade on the fish. Add 4 extra clementines ( halved) in the oven.
Bake in the oven at 200° for 10 minutes. Mix the other 1/2 of the marinade with a few table spoons of fresh coriander and parsley, 2 table spoons of black olives, a pinch of smoked paprika powder and a pinch of sweet paprika paprika powder. Spread on the fish. Put back in the oven for a few minutes, until the fish is ready.
Spread the fish and clementines on the lentils. Finish with fresh coriander and parsley.
Serve with baby spinach.
