Cooking in a tagine

I have a few tagines in my kitchen cupboards, a really huge one for an open fire, and three smaller ones. I often use them as oven dishes, without the lid. Cooking with the lid is a perfect way to reduce the chance to burn your food, thus cooking without watching.

For 2p, chop 1 large broccoli. Mix with 300 grams of cherry tomatoes, 1 chopped red onion, 4 chopped garlic cloves and a handful af black olives. Add 1 table spoon of dried basil, pepper, salt and a large drizzle of olive oil.

Mix, cover and put in the oven at 160° for 1,5h (while having a long video call😉). Open the lid, mix, spread 2 salmon filets. Bake, uncovered, for another 15-20 mins. Finish with fresh basil and some lemon juice.
