The season of fresh borlotti beans has started. I never prepared a dish with the fresh ones, so I checked internet to find some typical recipes. Cooking time varies from one recipe to the other😏, between 10 minutes ( which is surely not correct) and 45 minutes. I decide to remove only the large outer layer, we’ll see. Chop 1 large red onion and 4 garlic cloves. Heat a pan with olive oil. Fry the onion and garlic. Add 2 cans of tomatoes and 2 dried chilies. Rinse the cans with some water and add some extra water in the pan. Add 2 bay leaves and 2 table spoons of chopped fresh sage. Add the borlotti beans. Allow to simmer for 30-50 mins, until the beans are ready. Taste, add pepper and salt. Finish with a few table spoons of light cream.Boil some pasta al dente. Serve and enjoy a simple and healthy vegetarian meal.
Love these beans! Only they are called Vermont cranberry beans or New England cranberry beans here LOL! Love that you added the cream, my mom often did when I was growing up.
