The best tomatoes ever

I never ever tasted more delicious tomatoes than the variety coeur de boeuf, as long as they have the ideal maturity. This recipe is one of I used piadini instead of sour dough bread and marinated more tomatoes for extra flavor, extra vegetables.

Put 1 teaspoon of fennel seeds and the zeste of 1 lime in a mortar. Grind and mix with olive oil ( 3 table spoons). Slice 2 large tomatoes thinly. Put them on a plate. Season with salt and spread the marinate on the tomatoes. Allow to marinate. Turn them now and again.

Mix the meat of 2 avocados with the juice of the lime, 2 or 4 chopped garlic cloves, pepper and salt. Finish with a drizzle of olive oil.

Spread the avocado mixture on two piadini. Spread 100 grams of mozzarella on each. Bake the piadini in the oven at 200° until the cheese has melted, for approximately 15-20 minutes.

Serve the piadini with the marinated tomatoes and fresh parsley.
