Frozen vegetables, why not?

This awkward period has its positive effects. Although I try to remain creative, the restricted variety of vegetables has an important impact on our weekly menu. Frozen vegetables are not comparable with fresh ones, but, why not?

With a small freezer, storage is limited, but you will never end up finding some products from another era.

Put a mixture of frozen beans, green beans and broccoli in an oven dish. Add 1 chopped courgette, 4 chopped garlic cloves, chili flakes, 1 table spoon of dried thyme and 2 table spoons of pine nuts. Finish with a drizzle of olive oil and mix. Bake in the oven at 180° for approximately 30 mins. Stir halfway.

Boil a portion of whole grain pasta al dente in salted water. Drain.

Mix pasta and vegetables. Serve with grated parmesan and lemon. Easy, tasty vegetarian food.
