If you would ask me, the best pizza dough is thin and crispy. If you don’t have time, and there is no pizzeria open, and still you are desperately craving for some crispy pizza, puff pastry is a perfect alternative for the dough.
I tend to buy a rectangular piece. Prebake it in the oven at 180° for 15 mins, with some baking paper below and on top. Cool down.
Slice 1 large white onion, 1 red onion, 4 garlic cloves thinly. Bake in a drizzle of olive oil. Add some chili flakes and 1 table spoon of dried oregano. After 10 mins, add 200 grams of fresh spinach and bake shortly. Add the zeste of 1 lemon, salt and black pepper.
Spread the vegetables on the puff pastry. Spread some sliced black olives, 200 grams of sliced mozzarella and some grated parmesan for extra flavor.
Bake in the oven at 180° for 20-30mins. Easy vegetarian food.
