Panzanella

Panzanella is a typical Italian dish, based on tomatoes and bread. My version is, of course, a little different, but with the same ingredients.The warm tomato salad will be served with some grilled fish for Iris, and some Italian sausages for me.Wash 800 grams of cherry tomatoes. Remove the stems. Put them in a large oven dish. Add 125 grams of older bread cubes, 4 chopped garlic cloves, a few stems of fresh rosemary and a drizzle of olive oil. Mix everything. Put the dish in the oven at 150° for approximately 1, 1 1/2hour. Stir halfway and add 2 table spoons of red wine vinegar. Once ready, spread fresh basil, salt, lots of black pepper and rocket or dandelion salad.Serve with some fish or meat, or even without, as lunch.
