A tasty pumpkin of approx 1 kilo is a perfect portion for 2p.Halve the pumpkin, remove the seeds. Put the halves with the skin upwards in an oven dish( 1 for each is nice to serve). Spread some oil. Bake in the oven at 200° for 30 mins. Stop the oven and keep the pumpkin in the oven to cook further.Slice 2 red onions and 4 garlic cloves. Fry in a drizzle of olive oil. Add 1 table spoon of dried basil, chili flakes and 100 grams of fresh baby spinach. Once ready, add 2 table spoons of ready made pesto. Remove the meat from the pumpkin halves. Mix with the onion, pesto mixture and 200 grams of mozzarella cubes ( keep 100 grams of mozzarella separate). Taste add pepper and salt.Fill the pumpkin halves. Mix 1 slice of older bread cut in cubes with the remaining mozzarella cubes. Spread on the pumpkins.Bake in the oven at 180° for 30 mins, until ready and crispy.A leftover? Perfect small lunch for the day after.
