My favorite cooking style: all in one dishes

I had a lovely afternoon. My dear friend Anria invited me to her class. I had the opportunity to talk about the living will and advance directives, the subject of my thesis in counseling. I really managed to catch the attention and introduce the delicate matter to young people.

Coming home, I decided to prepare a vegetarian all in one dish. Slice 800 grams of carrots (if you can find purple ones, mix with orange for extra color). Clean and slice 500 grams of potatoes. Slice 1 red onion and chop 4 garlic cloves. Put everything in a large oven dish. Mix 1 tablespoon of grain mustard with 2 tablespoons of olive oil, 1 tablespoon of dried thyme, pepper and salt. Mix with the vegetables. Cover with aluminium foil. Put in the oven at 200° for 50 mins. Stir. Put back in the oven, uncovered, for another 15-20mins, until crispy. Spread 4 eggs. Season with pepper and salt. Bake for another 5 mins.

Serve with a simple baby salad and a lemon dressing.
