Inspired by Jamie Oliver

This week ‘Veg’ of Jamie Oliver is the kitchen bible. The first recipe is an oven dish with potatoes, mushrooms and truffle as extra flavor. For 2p, chop 500 grams of potatoes, 2 onions and 4 garlic cloves. Put them in an large round oven dish. Add a drizzle of olive oil, pepper, salt and 1 table spoon of dried thyme. Bake in the oven at 200° for 25-30mins. Clean and chop 500 grams of oyster mushrooms. Add to the pan. Bake in the oven for 20 mins. Stir halfway. Mix 3 eggs with 150grams of cottage cheese, some truffle tapenade, pepper, salt and fresh thyme. Add to the pan. Finish with some grated parmigiano. Bake for another 10-15 minutes. Serve with dandelion salad and lemon. 😋
