Remove the skin and chop in cubes.Clean 600 grams of purple potatoes. Cut in slices or cubes. Chop 1 red onion, 4 garlic cloves and 1 chili.Put everything on baking paper. Mix with 1 tablespoon of dried basil and a drizzle of olive oil. Bake in the oven at 180° for 30-40 mins. Stir halfway. Finish with pepper, salt, fresh or frozen fresh basil and a drizzle of balsamic vinegar.Serve with some ricotta cheese.
