Iris’ father is visiting us. He is one of my loyal followers. He has no choice, docV cooks and decides what he will eat, he can only decide how much ;-).
In the delicious.nl I find another version of shaksuka, with chickpeas.
For 2-3p, chop 4 garlic cloves and 2 medium sized bell peppers. Put them in an oven dish. Add a drizzle of olive oil. Bake in the oven at 180° for approx 30 mins. Stir halfway.
Add 2 teaspoons of cumin seeds, 1 can of tomatoes. Continue to bake in the oven for another 20 min. Add pepper, salt, 1 can of chickpeas. Mix. Make for holes and put 1 egg in each hole. Bake in the oven until the eggs are cooked.
Finish with chopped coriander, some Greek yoghurt. Serve with some couscous (or without).
