After a whole day of painting doors an easy meal is welcome. With 1 cauliflower, 2 red onions, 4 garlic cloves, 4 cm of ginger 1/2 of a small red cabbage and 2 cans of chickpeas a healthy menu is guaranteed.
Chop the vegetables. Mix with the drained chickpeas. Add a drizzle of olive oil, 1 table spoon of curry powder, a pinch of smoked paprika powder, pepper and salt.
Bake in the oven at 180° for approx 1h. Stir halfway.
Chop 1 avocado and mix with lemon juice.
Finish the dish with the avocado and chopped basil.
