Today I need cheese and gorgonzola dolce will give me all the best a cheese can offer : tender, smooth, not too strong but still a delicate flavor and easy to transform in a sauce.
Chop 1 red onion and 4 garlic cloves. Drain and dry 1 large can of artichockes. Chop them in quarters.
Boil 120 grams of pasta. Fry the onion and ½ of the garlic in a drizzle of olive oil. Add the artichokes and 1 table spoon of dried thyme and bake for a few mins.
Drain the pasta. Add 100 grams of gorgonzola dolce and 100 ml of light cream to the artichokes. Stir. In another pan fry the other ½ of the garlic and the bread crumb of 1 slice of older bread and 2 table spoons of pumpkin seeds in some olive oil. Bake until cripsy.
Mix pasta and artichokes. Taste, add black pepper and salt if necessary. Finish with the breadcrumb and pumpkin seeds. Serve with a large green salad. I love it!
