Chop 2 yellow bell peppers, 4 garlic cloves, 4 cm of ginger and 1 spicy pepper. Put in an oven dish and add a drizzle of olive oil. Put in the oven at 200°. Stir now and again.
Make a marinade with 2 table spoons of soy sauce, 2 table spoons of mirin, 2 table spoons of apple vinegar and 1 table spoon of honey. Taste, add pepper and salt. Put the marinade on 250 grams of chicken breast filet.
Boil some rice.
Chop 1 mango and 4 spring onions. Mix the mango and onions with the bell pepper (the bell pepper needs more baking time). Put in the oven. Put the chicken on baking paper. Put on the highest level in the oven. After 15 mins, turn the chicken. After another 15 mins (if the chicken is thinly sliced) the dish is ready. Finish with fresh coriander or parsley. For the lovers of spicy, add hot chili sauce.
