Although grapefruit is a winter ingredient, it’s a perfect to use in a summer dish.
Green beans, or asparagus beans (less work to cut the ends of ;-))are at their best in this season. Cut 400 grams of green beans in pieces of 3-4 cm. Add 4 chopped garlic cloves, 1 spicy little pepper and 2 spring onions. Add 1 table spoon of dried thyme or use a bunch of fresh thyme. Put everything in a tajine with a little drizzle of olive oil. Cover the tajine and put in the oven at 180-200° for approx 30 mins. Cut 1 grapefruit in slices. Remove the seeds of 1 pomegranate. After 30 mins, stir the beans, add the grape fruit and put some skinless salmon filets on top. Cover the dish. Put back in the oven for another 20 mins. Serve with the seeds of a pomegranate.
