I have a confession to make : certain days I would prefer not to cook but, never ever, I would decide not to eat a warm meal in the evening ;-).
This recipe is an ideal ‘in between’.
Start by heating the oven at 160°. Put 250 grams halved cherry tomatoes on baking paper. Add a drizzle of olive oil, pepper, salt and 1 teaspoon of dried basil. Put the tomatoes in the oven for 20 mins. Chop 1 red onion, 4 garlic cloves and 1 spicy little pepper. Fry in some olive oil. Boil pasta for 2p. Mix the pasta, the fried onion and garlic, the ovendried tomatoes with 4 chopped tomatoes (mix different kind of tomatoes) and pieces of mozzarella ( 200 grams approx). Put everything in an oven dish. Add pepper, salt and a handful of fresh basil. Reheat in the oven for approx 20 mins. Finish with fresh basil and a drizzle of balsamic vinegar. Pasta caprese= ideal recipe as ‘in between’.
