Green asparagus is a local vegetable and they are so fresh, you could eat them raw. Instead of eating them pure, let’s combine with smoked salmon.
For 4p wash and prepare 1.2 kilo of green asparagus. The preperation is really easy, simply remove the hard part by breaking it off. Roll a slice of smoked salmon around 3 asparagi (we need 350-400 grams of smoked salmon for 4p). Put them in a rectangular oiled oven dish. Make a creamy sauce : mix 200 grams of light ricotta with 300 ml of superlight cream with 2 handful of chopped fresh parsley and chives, 2 chopped garlic cloves, pepper and salt. Pour the mixture over the asparagus.
Serve with baked potatoes. Boil the potatoes until they are almost ready. Mix with ghee and bread crumb mixed with dried thyme, pepper and salt.
