‘All in one’ to serve

If I have time during the day I prepare our dinner, as much as I can, in advance. The most convenient dishes are the ‘all-in-one’ oven dishes.

Preheat the oven at 200°. Wash and chop 1 medium sized cauliflower for 2. Spread in an oven dish. Add a drizzle of olive oil, some salt and 1 teaspoon of curry powder. Bake in the oven for 20 minutes. Stir halfway. Set aside.

Chop 1 onion and 4 garlic cloves. Heat a pan with 1/2 table spoon of olive oil. Bake and stir. Add 1 teaspoon of curry powder, 1 teaspoon of ginger powder and some salt. Bake until al dente. Mix with a handful of fresh chopped parsley. Set aside.

Make a bechamel sauce with 1 table spoon of butter, 1 table spoon of flour, 250 ml of semi skimmed milk, 200 ml of water, 1 cube of good quality vegetable stock, 2 teaspoons of dried thyme. Finish with a drizzle of lemon juice. Taste, add pepper and salt.

Slices 150 grams of smoked salmon in stripes.

Spread the onion mixture. Spread the salmon.

Finish with the bechamel sauce and 30 grams of grated pecorino.  Cover the dish and store cool.

Preheat the oven at 200°. Bake the dish for 20-25minutes. Serve with arugula.
