Start the new year slowly

A second virus in 2 weeks time is forcing me to slow down ( which is really difficult for me). So my meals will be extra simple and light. Tonight we will have some beautiful salmon with roasted carrots.

Wash 2 bunches of carrots carefully so that you don’thave to peel off the skin. Remove the green part. Cut lengthwise. Spread on baking paper on an oven tray. Add a drizzle of olive oil, 2 teaspoons of curry powder, a pinch of salt and 2 heaped teaspoons of dried basil. Mix with your hands. Bake in the oven at 180° for 30 minutes. Turn halfway. Add 4 chopped garlic cloves. Bake for another 15 minutes ( depends how tender you prefer the carrots to be). Put the salmon filets on the tray ( seasoned with some pepper and salt). Bake for another 15 minutes. Serve with low fat Greek yogurt.
