No carbs tonight

Although carbs can give me this extra comfort during winter,, with a cauliflower and a portion of Swiss chard the amount of vegetables for 2p is already rather impressive and thus, tonight there will be no ‘space’ for extra carbs.

Wash the vegetables. Chop the cauliflower and outer leaves. Remove the stems from the Swiss chard and chop. Spread the cauliflower on baking paper on an oven tray. Mix with 2 table spoons of sunflower oil, pepper and salt. Bake in the oven at 200° for 20 minutes.

In the meantime, cut a piece of skinless fresh salmon ( 300-350 grams, defrosted) in cubes of 3cm. Marinate in 2 table spoons of soy sauce. Chop 4 garlic cloves, 8cm of fresh ginger, 1 chili and 6 spring onions.

After 20 minutes, stir the cauliflower. Add all the other vegetables and 2 teaspoons of Chinese 5 spices mixture ( anise, fennel, cinnamon, peppercorn, ginger). Mix. Put back in the oven. Bake for another 15 minutes. Stir. Spread the salmon and the marinade. Bake for another 10-15 minutes until the salmon is ready. Serve.
