Strolling through the last edition of delicious.nl I was immediately attracted by a few dishes. Chickpeas pumpkin pizza with shrimps is one of them. Of course I will give the recipe a little docv twist.
Mix 400 grams of pumpkin puree ( prepared in the oven) with 100 grams of chickpea flour, 30 grams of grated parmesan, 1 table spoon of dried oregano, 4 chopped garlic cloves, 1 table spoon of chia seeds and 1 egg. Taste, add pepper and salt. Spread the mixture on baking paper to fit in a rectangular tray ( approximately 20×30 cm). Bake in the oven at 200° for 15 min.
Marinate 300 grams of good quality peeled scampi with 1 chopped chili, the zeste of 1/2 untreated lemon and a little drizzle of olive oil. Store in the fridge. Slice 250 grams of courgettes with a potato peeler. Cut 150 grams of cherry tomatoes in halves. Slice 200 grams of mozzarella.
Spread the courgettes, the scampi and tomatoes on the pumpkin. Season with pepper, salt and 1 table spoon of dried basil. Finish with the mozzarella.
Bake in the oven at 200° for 15 minutes. Serve with baby spinach and lemon wedges.
