After writing the house rules and doing my Tuesday morning voluntary work, I prepare the meal for tonight. Chop 2 leeks and wash thoroughly. Drain. Spread on baking paper. Add 2 table spoons of olive oil and a few stems of fresh thyme. Mix.
Bake in the oven at 200° for 15 minutes. Stir halfway. At the same time pre bake a rectangular puff pastry filled with baking paper and dry beans for 10 minutes. After 15 minutes. Stop the oven. Add 4 chopped garlic cloves to the leek. Remove the beans and baking paper from the puff pastry and leave both in the oven for another 15 minutes.
Mix 2 eggs with 125 ml of light cream, pepper, salt, 1 table spoon of dried thyme and 100 grams of roughly grated bel paese.
Spread the leek on the puff pastry. Spread some black olives ( 2 table spoons). Spread the egg/cream/cheese mixture.
Bake in the oven at 180° for 25 minutes. Cover if the surface becomes too dark. Serve.
