I order fresh eggs from Stefania. I love a soft boiled egg in the morning. Recipes with eggs will always get my attention: delicious, cheap and attractive.
Tonight’s dinner is based on an ingredient which I discovered in Italy : agretti or barba di frate ( friar beard). If they are super fresh they are easy to clean by just removing the harder part of the stem. I bought 400 grams for 2p. Wash them. Boil them for 2 minutes in salted boiling water. Drain and rinse with cold water to keep the beautuful green color. Mix the agretti with 4 chopped garlic cloves, 20 grams of grated parmesan, 1 teaspoon of paprika powder, 1 table spoon of dried thyme, salt, pepper and 2 table spoons of olive oil. Spread 400 grams of sliced boiled potatoes and 2- 3 sliced tomatoes in an oiled dish. Season with pepper and salt. Put the agretti on the tomatoes. Put 4 raw eggs on the agretti. Finish with some extra pepper, paprika powder and parmesan.

Bake in the oven at 180° for approximately 20 -30 minutes, until the egg is ready. Finish with good quality balsamic vinegar.
