I’m checking our stock. 140 grams of digestive cookies are waiting for consumption. In the little freezer a few packages of figs are filling the space, so I wll use 1 portion of 14 halved figs.
Mix the cookies with 40 grams of cold butter in the blender. Add 1/2 teaspoon of speculoos spices. Spread the mixture in a smaller spring form (18cm) covered with baking paper. Store in the fridge.
Mix 3 eggs, 500 grams of low fat Greek yogurt and 2 teaspoons of corn starch.
Put the defrosted figs in a microwave recipient. Spread 1 table spoon of honey flavored with saffron ( or use normal honey and add some saffron). Cover and put 2 minutes into the microwave at maximum heat. Mix the figs and liquid with the yogurt. Taste, add a few drops of stevia until you obtain your ideal sweetness. Spread on the cookies. Bake in the oven at 200° for approximately 50-60 minutes (check now and again. Cool down. Enjoy your afternoon teatime.
Store the other pieces in the fridge.
