August is halfway, incredible not?

In a few days time we’ll have some friends passing by for a few days. So, today, I’ll put my nose in a my cookbooks to organize a menu and a shopping list.

What did we eat last night? Cod, fennel and potatoes in a delicious( inspired delicious.nl) all in one dish.

Wash and slice 400 grams potatoes thinly. Slice 2 fennel bulbs thinly. Spread the potatoes and fennel in a large oiled oven dish.

Mix 70 grams of butter with 1,5 table spoon of drained capers, 1 teaspoon of roasted fennel seeds, 4 chopped garlic cloves and the zeste of 1 lemon. Grind in a mortar to obtain a pasta. Add some pepper and salt. Brush some butter on the potatoes and fennel. Cover the dish with aluminum foil. Bake in the oven at 180° for 30-45mins. Put 4 pieces of cod on the vegetables. Spread all the butter and a slice of lemon on each slice of cod. Bake for another 20-25 minutes, until the fish is ready. Finish with chopped parsley.
