I have this – for certain people strange – habit that a day is only finished once you have enjoyed a ‘real’ dinner.

Since I’m able to decide my own life, I finish my evening with a candlelight dinner. All my friends seem to have accepted this ‘habit’ as nobody complains if I start cooking even if everybody is exhausted. I’m pretty sure they might think I’m obsessed, which probably I am.

Iris and I live together for almost 13 years, our first trip together was a cooking class in Florence. Can you imagine? How crazy is that, knowing that Florence is only 1h drive. Anyway, tonight’s dinner is oneof those late ones, even for us. We arrive at 22.00 back home and while driving home, I decide to prepare some pizza with readymade pizza dough.

Spread the dough on baking paper on an oven tray. Spread some olive oil and sundried oregano. Spread thinly sliced beautiful tomatoes. Spread 4 chopped garlic cloves and 1 sliced fresh onion. Season with dried oregano, pepper and salt. Spread the anchovies of a small can. Spread some thinly sliced mozzarella. Finish with the oil of the anchovies. Bake in the oven at 180° for 20 mins. Serve with fresh arugula. Easy, late night candlelight dinner.😘
