How to simplify recipes

When I read a recipe, or sometimes I even skip reading and look at the list of ingredients, I start thinking how to make it as simple and ,preferable, as healthy as possible. Frozen fish, onion, tomatoes, garlic, basil, chili and small potatoes in a all in one version.

Start with the potatoes because they need more time. Wash 500 grams of potatoes, half them and put in large oven dish. Mix with a drizzle of olive oil. Bake in the oven at 200° for 20 mins. Slice 1 large fresh onion, 4 garlic cloves and 1 fresh chili. Mix with 1 table spoon of dried basil. Add to the potatoes after 20 minutes. Stir. Bake for 15 mins. Slice a few different beautiful tomatoes. Marinate 400 grams of defrosted fish filet with pepper, salt and some balsamic vinegar. Spread the tomatoes (move the potatoes and onion in order to have the tomatoes on the bottom side). Spread the fish. Cover with aluminium foil. Bake for another 15-20mins. Serve with arugula.
