Cut 6 small red onions in quarters. Chop 1 large red bell pepper in long pieces and 4 garlic cloves. Spread all together in an oven dish. Add a little drizzle of olive oil and 1 tablespoon of dried basil. Bake in the oven at 180° for 20 mins. After 20 mins add 300 grams of halved cherry tomatoes. Bake for another 20 mins. Add pepper. Serve with grated bottarga (salty element)and buffalo mozzarella.cFinish with balsamic vinegar and fresh basil.
