Radishes, parsley, rucola, spring onion, garlic, frozen spinach are today’s vegetables.
Defrost approximately 300 grams of spinach leaves. Drain. Mix the spinach with, two table spoons of fresh parsley, 1 table spoon of anchovies paste(instead of salt), 4 chopped garlic cloves, pepper and 1 table spoon of dried oregano.
Prebake 1 round puff pastry for 15 mins at 180°. Cool down. Spread 100 grams of low fat white cheese (similar to Philadelphia). Spread the spinach. Spread sliced radishes ( you need 2 bunches in total, the leftover is for the salad which is served with the quiche).
Spread 2 chopped spring onions. Finish with 200 grams of mozzarella, pepper, olive oil and dried oregano.
Serve the quiche with a rucola salad and the leftover of the radishes.
