Cooking for 2p is cosy, but, you know, I really would look forward to cook for at least 10p.
Anyway, this recipe is a simple and healthy combination, inspired by Bill Grainger.
Boil 120 grams of barley al dente in salted water.
Mix 1 sliced onion, 4 chopped garlic cloves, 500 grams of halved cherry tomatoes and 1 chopped chili in an oven dish. Add 1 drained can of cannellini beans, 2 teaspoons of dried thyme and a drizzle of olive oil. Bake in the oven at 180° for 30 mins.
Serve the vegetables with the barley, a green salad, some parmesan or old pecorino flakes. Finish with fresh basil, a drizzle of good olive oil and balsamic vinegar.
