Chop 500 grams of leek. Wash carefully. Drain. Chop 4 garlic cloves. Heat 1 table spoon of butter and 1 table spoon of olive oil in a pan. Add the garlic and leek and 1 table spoon of dried thyme. Bake on a low fire. Add some water. Close the pan. Stir now and again until the leek is sweet and tender. Add water if necessary. Add pepper and salt.
Boil 120 grams of pasta al dente. Drain and keep some of the boiling water.
Grate 40 grams of parmigiano. Mix 3/4 with 1 egg.
Mix pasta and leek. Cool down for a few minutes. Mix with the egg and cheese mixture. Add extra boiling water if necessary. Taste, add pepper and salt.
Serve and finish with some parmigiano.
